- 8–12 tsp (50 ml) liquid honey
- 1 sheet pre-made frozen puff pastry, defrosted
- 2–3 apricots, sliced into 5–6 slices each
- 10–15 thin slices of pear
- 2–3 slices of brie cheese
- 4–6 tsp (25 ml) brown sugar
- Cinnamon
- 1 egg + splash of water for an egg wash
- Coarse or regular sugar
- Chopped walnuts, fresh thyme and whipped cream for serving
Instructions
- Set your oven to 400°F and prepare a large baking tray with a sheet of parchment paper.
- Unroll the puff pastry sheet and divide it into 4-6 smaller rectangles.
- On the parchment paper, pour 2 teaspoons of honey for each rectangle. Arrange 5-6 apricot slices over the honey, then scatter 1 teaspoon of brown sugar and a dash of cinnamon on top. Repeat this process with the pear slices, creating 2-3 tarts of each fruit variety.
- Place a rectangle of puff pastry over each fruit stack and seal the edges by pressing down with a fork. Do the same with the rest of the pastry pieces.
- Apply the egg wash to the surface of each tart, optionally sprinkle with sugar, and then place them in the oven to bake for 25-30 minutes or until the pastry is golden brown.
- Take the tarts out of the oven and allow them to cool on the tray for a few minutes. Afterward, invert the tarts onto a serving plate and garnish with whipped cream, chopped walnuts, and fresh thyme. Enjoy your treat!
