  • 812 tsp (50 ml) liquid honey
  • 1 sheet pre-made frozen puff pastry, defrosted
  • 23 apricots, sliced into 56 slices each
  • 1015 thin slices of pear
  • 23 slices of brie cheese
  • 46 tsp (25 ml) brown sugar
  • Cinnamon
  • 1 egg + splash of water for an egg wash
  • Coarse or regular sugar
  • Chopped walnuts, fresh thyme and whipped cream for serving

Instructions

  1. Set your oven to 400°F and prepare a large baking tray with a sheet of parchment paper.
  2. Unroll the puff pastry sheet and divide it into 4-6 smaller rectangles.
  3. On the parchment paper, pour 2 teaspoons of honey for each rectangle. Arrange 5-6 apricot slices over the honey, then scatter 1 teaspoon of brown sugar and a dash of cinnamon on top. Repeat this process with the pear slices, creating 2-3 tarts of each fruit variety.
  4. Place a rectangle of puff pastry over each fruit stack and seal the edges by pressing down with a fork. Do the same with the rest of the pastry pieces.
  5. Apply the egg wash to the surface of each tart, optionally sprinkle with sugar, and then place them in the oven to bake for 25-30 minutes or until the pastry is golden brown.
  6. Take the tarts out of the oven and allow them to cool on the tray for a few minutes. Afterward, invert the tarts onto a serving plate and garnish with whipped cream, chopped walnuts, and fresh thyme. Enjoy your treat!
