Ingredients
- – 1 cup (240 ml) almond or other non-dairy milk
- – 1 teaspoon (5 ml) apple cider vinegar
- – 1 1/2 cups (180 g) all-purpose flour (see notes for gluten-free option)
- – 1 teaspoon (5 ml) baking powder
- – 1/2 teaspoon (2.5 ml) baking soda
- – 1/2 teaspoon (2.5 ml) salt
- – 3/4 cup (150 g) granulated sugar
- – 2 teaspoons (10 ml) vanilla extract
- – 2/3 cup (160 ml) vegetable oil
- – 1/4 – 1/2 cup (60-120 ml) fruit jam (or store-bought brand)
- – Vegan vanilla icing of choice
Instructions
- Set your oven to 350°F to start warming up.
- Combine the non-dairy milk with apple cider vinegar, and let this mixture rest for a bit.
- In a separate bowl, blend together the flour, baking powder, baking soda, and salt.
- In another bowl, combine the sugar, vanilla, and vegetable oil thoroughly.
- Mix all the prepared ingredients into one bowl and stir until the batter is smooth.
- Pour the batter into cupcake liners and bake for approximately 25 minutes, or until a toothpick inserted comes out clean.
- Once the cupcakes have cooled down, carve a small hole at the top of each, fill it with a spoonful of jam, and replace the top piece.
- Spread your chosen vegan vanilla icing over the cupcakes.
- Use a straw to make two punctures in the top of each cupcake.
- Dilute some jam with a little water to make it runnier, then drip it from the holes to create a blood-like effect.
