Ingredients

  • – 1 cup (240 ml) almond or other non-dairy milk
  • – 1 teaspoon (5 ml) apple cider vinegar
  • – 1 1/2 cups (180 g) all-purpose flour (see notes for gluten-free option)
  • – 1 teaspoon (5 ml) baking powder
  • – 1/2 teaspoon (2.5 ml) baking soda
  • – 1/2 teaspoon (2.5 ml) salt
  • – 3/4 cup (150 g) granulated sugar
  • – 2 teaspoons (10 ml) vanilla extract
  • – 2/3 cup (160 ml) vegetable oil
  • – 1/4 – 1/2 cup (60-120 ml) fruit jam (or store-bought brand)
  • – Vegan vanilla icing of choice

Instructions

  1. Set your oven to 350°F to start warming up.
  2. Combine the non-dairy milk with apple cider vinegar, and let this mixture rest for a bit.
  3. In a separate bowl, blend together the flour, baking powder, baking soda, and salt.
  4. In another bowl, combine the sugar, vanilla, and vegetable oil thoroughly.
  5. Mix all the prepared ingredients into one bowl and stir until the batter is smooth.
  6. Pour the batter into cupcake liners and bake for approximately 25 minutes, or until a toothpick inserted comes out clean.
  7. Once the cupcakes have cooled down, carve a small hole at the top of each, fill it with a spoonful of jam, and replace the top piece.
  8. Spread your chosen vegan vanilla icing over the cupcakes.
  9. Use a straw to make two punctures in the top of each cupcake.
  10. Dilute some jam with a little water to make it runnier, then drip it from the holes to create a blood-like effect.
