- ¼ cup heavy cream
- 1 ½ cups freeze-dried strawberries
Instructions
- Preheat your oven to 350°F (175°C) and grease your cake pans generously.
- Beat together the butter and sugar in a large mixing bowl until light and fluffy. Add the oil and mix until combined.
- Incorporate the eggs, one at a time, fully mixing each egg into the batter before adding the next. Stir in the vanilla and almond extracts.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add this mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops with a spatula. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Prepare the strawberry filling while the cakes cool by combining diced strawberries, sugar, lemon juice, and zest in a bowl and letting it sit for about 15 minutes.
- Beat the butter for the frosting until creamy, then gradually add the confectioner’s sugar. Mix in the vanilla, almond extract, and salt. Slowly add the heavy cream until the frosting reaches a spreadable consistency.
- Assemble the cake once cooled by placing one layer on a serving plate, spreading with strawberry filling, and topping with the second layer. Frost the top and sides with the frosting.
- Decorate with freeze-dried strawberries on top for a stunning finish.
