- 1 cup coconut milk or almond milk

Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Incorporate the diced potatoes and pour in the vegetable broth. Bring to a boil.
- Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
- Stir in the broccoli florets and cook for an additional 5 to 7 minutes.
- Blend the soup until smooth and creamy using an immersion blender.
- Stir in the coconut milk or almond milk, seasoning with salt and pepper.

Notes
