Ingredients

  • 2 medium potatoes, peeled and diced

  • 4 cups vegetable broth
  • 1 cup coconut milk or almond milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: nutritional yeast, fresh herbs

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Incorporate the diced potatoes and pour in the vegetable broth. Bring to a boil.
  4. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the broccoli florets and cook for an additional 5 to 7 minutes.
  6. Blend the soup until smooth and creamy using an immersion blender.
  7. Stir in the coconut milk or almond milk, seasoning with salt and pepper.

Notes

For brighter green broccoli, place florets in ice water after cooking. Customize seasoning to taste, and add greens for enhanced nutrition.
