- 1 cup dark chocolate chips (dairy-free)
- 1 can (15 oz) chickpeas, liquid reserved (aquafaba)
- 1/4 cup maple syrup or agave nectar
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
- Pinch of salt
Instructions
- Melt the chocolate chips in a heatproof bowl over simmering water or in the microwave in 30-second intervals.
- Allow the melted chocolate to cool slightly (but not harden).
- Pour the aquafaba (chickpea liquid) into a large mixing bowl and whip with an electric mixer on high speed until stiff peaks form, about 5-7 minutes.
- Gradually add the maple syrup while continuing to whip until glossy and stiff.
- Gently fold in the cocoa powder, vanilla extract, and salt.
- Carefully fold in the melted chocolate until fully incorporated, maintaining as much air in the mixture as possible.
- Divide the mousse into individual serving dishes and refrigerate for at least 4 hours or overnight to set.
- Serve chilled, optionally garnished with fresh berries, coconut whipped cream, or chocolate shavings.
Notes
- For best results, make sure the aquafaba is cold before whipping.
- Use high-quality dark chocolate for the richest flavor.
- The mousse can be made up to 2 days in advance and stored covered in the refrigerator.
- Try adding a tablespoon of liqueur like Grand Marnier or Kahlúa for an adult version.
