Instructions

  1. Melt the chocolate chips in a heatproof bowl over simmering water or in the microwave in 30-second intervals.
  2. Allow the melted chocolate to cool slightly (but not harden).
  3. Pour the aquafaba (chickpea liquid) into a large mixing bowl and whip with an electric mixer on high speed until stiff peaks form, about 5-7 minutes.
  4. Gradually add the maple syrup while continuing to whip until glossy and stiff.
  5. Gently fold in the cocoa powder, vanilla extract, and salt.
  6. Carefully fold in the melted chocolate until fully incorporated, maintaining as much air in the mixture as possible.
  7. Divide the mousse into individual serving dishes and refrigerate for at least 4 hours or overnight to set.
  8. Serve chilled, optionally garnished with fresh berries, coconut whipped cream, or chocolate shavings.
