- 1 teaspoon (5 ml) baking powder
- 3/4 teaspoon (4 ml) baking soda
- 1/2 teaspoon (3 ml) kosher salt
- 1 teaspoon (5 ml) ground cinnamon
- 1/4 teaspoon (1 ml) ground ancho chili pepper or cayenne pepper
- 6 ounce (170 g) s roughly chopped bittersweet chocolate
- 1/2 cup (120 ml) plus 1 tablespoon (15 ml) canola oil
- 1/4 cup (60 ml) plus 1 tablespoon (15 ml) water
- 1 teaspoon (5 ml) vanilla extract
- 1/2 cup (120 ml) granulated sugar
- 1/2 cup (120 ml) packed dark brown sugar
- Flaky sea salt
Instructions
- In a medium-sized bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, ancho chili pepper, and chocolate pieces.
- In a separate, larger bowl, whisk the canola oil, water, vanilla extract, granulated sugar, and dark brown sugar until well combined.
- Incorporate the dry mixture into the wet mixture by folding gently. Cover this mixture and place it in the fridge to chill for 12 to 24 hours.
- Set your oven to 350 degrees F to preheat. Prepare a baking sheet by lining it with parchment paper.
- Shape the dough into balls about 2 inches in diameter. Freeze these for 10 minutes, then place them on the lined sheet, keeping a 3-inch gap between each.
- Gently flatten each dough ball with your hand and sprinkle some flaky sea salt on top. Bake for 6 minutes, then rotate the baking sheet 180 degrees.
- Continue baking for another 6-8 minutes until the edges of the cookies turn golden brown.
- Allow the cookies to rest on the baking sheet for 5 minutes. Move them to a wire rack to finish cooling.
- Repeat the process with any remaining dough.
