- 1 cup coconut milk
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup spinach

Instructions
- In a large pot, heat a splash of oil over medium heat. Add the diced onion and minced garlic, sautéing until soft and translucent.
- Add the diced carrots and cook for another 3-4 minutes.
- Pour in the vegetable broth and bring it to a boil.
- Once boiling, add the pasta, cooking according to the package instructions.
- After the pasta reaches al dente texture, stir in the coconut milk and fresh spinach.
- Season with salt and pepper to taste.
- Allow the soup to simmer for an additional 5-10 minutes.
- Serve warm, garnished with fresh herbs if desired.
