Description

A comforting and hearty Vegan Garlic Chickpea Soup, rich in flavor and perfect for cozy evenings.


Ingredients

  • 1 Tbsp olive oil, plus more for drizzling
  • 3 large garlic cloves, minced or pressed
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans (15 oz each) chickpeas
  • 1 (6oz-180 grams) large potato, diced
  • 2 cups (480 ml) low-sodium vegetable broth
  • Salt and black pepper to taste

Instructions

  1. Pour one can of chickpeas, liquid included, into a blender and blend until smooth.
  2. Heat olive oil in a pot over medium heat and add minced garlic, sautéing for about one minute.
  3. Introduce the puréed chickpeas, drained second can of chickpeas, and diced potato to the pot.
  4. Sprinkle in paprika, dried rosemary, thyme, and chili flakes, stirring to combine.
  5. Pour in vegetable broth and bring to a boil.
  6. Cover the pot with a lid, reduce heat to medium-low, and let it simmer for 25 minutes, stirring occasionally.
  7. Adjust seasoning to taste, serve hot with a drizzle of olive oil and freshly cracked pepper.

Notes

For a thicker soup, reduce the vegetable broth. You can also add coconut milk for extra creaminess.
