Ingredients

  • 4 large potatoes, diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk (or any plant-based milk)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, and sauté until softened.
  2. Add the potatoes, vegetable broth, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the potatoes are tender.
  3. Once cooked, use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  4. Stir in the coconut milk and heat through.
  5. Serve warm, garnished with fresh parsley.

Notes
