Ingredients

- 4 large potatoes, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup coconut milk (or any plant-based milk)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery, and sauté until softened.
- Add the potatoes, vegetable broth, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the potatoes are tender.
- Once cooked, use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the coconut milk and heat through.
- Serve warm, garnished with fresh parsley.
Notes
Add spices like cumin or smoked paprika for variety. Adjust thickness by adding more broth if needed.
