Ingredients

  • 12 ounces gluten-free pasta (linguine, fettuccine, or penne)
  • 2 tablespoons extra virgin olive oil (divided)
  • 3 cloves garlic (minced)
  • 12 ounces frozen artichoke hearts
  • 1 tablespoon capers
  • Salt and pepper (to taste)
  • 2 tablespoons lemon juice (approximately the juice of 1 lemon)
  • 1 cup fresh parsley (chopped)

Instructions

  1. Prepare the pasta according to the package directions. Drain and return it to the pot.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the frozen artichoke hearts to the pan. Sauté until heated through and browned on the outside.
  5. Next, add the capers, along with salt and pepper to taste.
  6. Transfer the artichoke mixture to the pot of pasta.
  7. Incorporate the lemon juice, the remaining tablespoon of olive oil, and chopped parsley. Toss well to combine and serve.

Notes

Add red pepper flakes for extra heat or fresh herbs like basil for added flavor. Store leftovers in an airtight container for up to three days.
