Ingredients

- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 lemon, juiced and zested
- 1 cup kale or spinach, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in vegetable broth and bring to a boil.
- Add orzo pasta and cook according to package instructions (8–10 minutes) until al dente.
- Stir in lemon juice and zest, then add chopped kale or spinach, allowing it to wilt.
- Season with salt and pepper to taste, serve hot, and garnish with fresh parsley.
Notes
For best results, use homemade vegetable broth and consider cooking orzo separately if storing leftovers.
