A delightful Vegan Pad Thai featuring rice noodles, firm tofu, and a creamy peanut sauce that bursts with flavor. Perfect for both vegans and non-vegans.


Ingredients

  • 200g rice noodles
  • 200g firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 1 cup bean sprouts
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Chopped peanuts, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. In a pan, heat vegetable oil over medium heat. Add cubed tofu and cook until golden brown.
  3. Add bean sprouts, julienned carrot, and sliced green onions to the pan and stir-fry for 2-3 minutes.
  4. In a bowl, mix soy sauce, peanut butter, lime juice, and sugar until smooth.
  5. Add the cooked noodles to the pan along with the sauce mixture. Toss everything together until well combined and heated through.
  6. Serve hot, garnished with chopped peanuts and fresh cilantro.

Notes

Press tofu before cubing for better texture. Consider adding a dash of sriracha for heat or sesame oil for richness.
