- 200g rice noodles
- 200g firm tofu, cubed
- 2 tablespoons vegetable oil
- 1 cup bean sprouts
- 1 carrot, julienned
- 2 green onions, sliced
- 2 tablespoons soy sauce
- 2 tablespoons peanut butter
- 1 tablespoon lime juice
- 1 teaspoon sugar
- Chopped peanuts, for garnish
- Fresh cilantro, for garnish
Instructions
- Cook the rice noodles according to package instructions, drain, and set aside.
- In a pan, heat vegetable oil over medium heat. Add cubed tofu and cook until golden brown.
- Add bean sprouts, julienned carrot, and sliced green onions to the pan and stir-fry for 2-3 minutes.
- In a bowl, mix soy sauce, peanut butter, lime juice, and sugar until smooth.
- Add the cooked noodles to the pan along with the sauce mixture. Toss everything together until well combined and heated through.
- Serve hot, garnished with chopped peanuts and fresh cilantro.
Notes
Press tofu before cubing for better texture. Consider adding a dash of sriracha for heat or sesame oil for richness.
