- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
- Add carrots, celery, zucchini, and bell pepper. Cook for about 5-7 minutes until vegetables are tender.
- Pour in vegetable broth and bring to a boil.
- Add potato gnocchi and cook until they float to the top, about 2-3 minutes.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
- Simmer for a few more minutes until heated through.
- Serve warm, garnished with fresh parsley.
