  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  2. Add carrots, celery, zucchini, and bell pepper. Cook for about 5-7 minutes until vegetables are tender.
  3. Pour in vegetable broth and bring to a boil.
  4. Add potato gnocchi and cook until they float to the top, about 2-3 minutes.
  5. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
