Description

Delightful Vietnamese summer rolls filled with fresh vegetables, herbs, and vermicelli noodles, served with a creamy peanut sauce.


Ingredients

  • 6 rice wrappers
  • 1 cup of rice noodles or vermicelli rice noodles
  • 1 cup of baby bok choy
  • 1 cup of carrots, thinly sliced
  • 1 cup of cucumbers, thinly sliced
  • 1 cup of red cabbage, thinly sliced
  • 1 cup of bell peppers (any color), thinly sliced
  • ½ cup of radishes, thinly sliced
  • ½ cup of pea pods
  • ⅓ cup of mint leaves
  • ½ cup of creamy peanut butter
  • 2 tablespoons of rice vinegar
  • ⅓ cup of tamari
  • ½ teaspoon of sriracha or chili paste
  • 2 tablespoons of organic granulated sugar or maple syrup
  • 2 tablespoons of toasted sesame oil
  • 1 clove of garlic, minced
  • ½ teaspoon of grated fresh ginger

Instructions

  1. Prepare the vegetables: Wash and thinly slice the baby bok choy, carrots, cucumbers, red cabbage, bell peppers, radishes, and pea pods. Set aside.
  2. Cook the noodles: Prepare the rice noodles or vermicelli noodles according to the package instructions. Drain and set aside.
  3. Make the peanut sauce: In a mixing bowl, whisk together the creamy peanut butter, rice vinegar, tamari, sriracha, organic sugar, toasted sesame oil, minced garlic, and grated ginger until smooth.
  4. Soften the rice wrappers: Fill a shallow dish with warm water. Dip one rice wrapper in the water for about 10-15 seconds, until it becomes soft and pliable. Carefully remove it, allowing excess water to drip off.
  5. Fill the wrapper: Place the softened rice wrapper on a clean work surface. In the center, layer a small amount of rice noodles, followed by the sliced vegetables and mint leaves.
  6. Roll it up: Starting from the bottom, fold the edge of the rice wrapper over the filling tightly. Then fold in the sides, and continue rolling until you have a tight cylinder. Repeat the process with the remaining wrappers and fillings.
  7. Serve: Arrange the summer rolls on a platter and serve with the peanut sauce for dipping.
