Instructions

  1. Heat the olive oil in a large pot over medium heat. Sauté the chopped onion and garlic until fragrant, about 3-4 minutes.
  2. Add the diced carrots and chopped bell pepper to the pot. Cook for another 5 minutes, allowing the vegetables to soften.
  3. Pour in the vegetable broth, stirring gently. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to a simmer. Add the chopped kale and spinach. Stir well to combine.
  5. Season with salt, pepper, and your choice of herbs. Let the soup simmer for an additional 15-20 minutes, allowing flavors to deepen.
