- 4 cups vegetable broth

- Salt and pepper to taste
- 1 teaspoon of your favorite herbs (like thyme or oregano)
Instructions
- Heat the olive oil in a large pot over medium heat. Sauté the chopped onion and garlic until fragrant, about 3-4 minutes.
- Add the diced carrots and chopped bell pepper to the pot. Cook for another 5 minutes, allowing the vegetables to soften.
- Pour in the vegetable broth, stirring gently. Bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer. Add the chopped kale and spinach. Stir well to combine.
- Season with salt, pepper, and your choice of herbs. Let the soup simmer for an additional 15-20 minutes, allowing flavors to deepen.
- Serve hot, garnished with fresh parsley for that extra pop.
Notes
For richer flavor, use homemade vegetable broth. Add a squeeze of fresh lemon juice just before serving for brightness.
