Description

Crispy egg rolls filled with a flavorful blend of crawfish, andouille sausage, and spices, perfect for festive gatherings.


Ingredients

  • 1 cup cooked crawfish tails or shrimp, chopped
  • 1/2 cup andouille sausage, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/2 cup cooked rice
  • 1 tbsp Cajun seasoning
  • 1 tbsp chopped parsley
  • 68 egg roll wrappers
  • Water, for sealing the edges
  • Vegetable oil, for frying

Instructions

  1. In a mixing bowl, combine cooked crawfish tails or shrimp, diced andouille sausage, shredded cheddar cheese, diced red bell pepper, diced red onion, cooked rice, Cajun seasoning, and chopped parsley. Mix everything thoroughly until well combined.
  2. Take an egg roll wrapper and lay it flat. Spoon a generous amount of the filling into the center, ensuring not to overfill.
  3. Using your fingers, dab water along the edges of the wrapper. Fold the sides over the filling and roll it tightly from the bottom to the top, sealing well.
  4. Heat vegetable oil in a deep skillet or pot over medium heat. Carefully add the egg rolls to the hot oil in batches, frying until golden brown and crispy.
  5. Remove cooked egg rolls and drain on paper towels. Serve with spicy ranch, cheese sauce, remoulade, or Cajun aioli.

Notes

For added flavor, consider marinating your seafood in Cajun seasoning before mixing. Use a damp cloth to keep egg roll wrappers from drying out.
