Delight in the comforting ease of weeknight baked potatoes, perfectly seasoned and buttery.


Ingredients

  • 3 Medium-sized Russet Potatoes
  • 4 tablespoons butter (cut into about 1/2-inch slices)
  • 1 tablespoon olive oil
  • 2 to 3 teaspoons coarse salt (or to taste)
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon lemon pepper (optional)
  • 1 teaspoon dried parsley

Instructions

  1. Scrub your potatoes and dry them with paper towels.
  2. Cut the potatoes in half lengthwise.
  3. Prepare a baking sheet with foil or parchment paper.
  4. Place your butter pats together in groups of two for each potato half.
  5. Season each butter pat with salt, pepper, garlic powder, onion powder, paprika, and lemon pepper.
  6. Rub the cut potatoes all over with olive oil and place them cut side down on the butter.
  7. Salt and pepper the skin.
  8. Preheat the oven to 425°F (220°C) and bake the potatoes on the top rack for 25 to 35 minutes.
  9. Halfway through baking, brush them with the melted butter from the pan.
  10. Sprinkle with a little more salt and dried parsley before serving.

Notes

Experiment with different herbs and seasonings for variations. Serve with your favorite toppings.
