Ingredients

- 3 Medium-sized Russet Potatoes
- 4 tablespoons butter (cut into about 1/2-inch slices)
- 1 tablespoon olive oil
- 2 to 3 teaspoons coarse salt (or to taste)
- 1 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon lemon pepper (optional)
- 1 teaspoon dried parsley
Instructions
- Scrub your potatoes and dry them with paper towels.
- Cut the potatoes in half lengthwise.
- Prepare a baking sheet with foil or parchment paper.
- Place your butter pats together in groups of two for each potato half.
- Season each butter pat with salt, pepper, garlic powder, onion powder, paprika, and lemon pepper.
- Rub the cut potatoes all over with olive oil and place them cut side down on the butter.
- Salt and pepper the skin.
- Preheat the oven to 425°F (220°C) and bake the potatoes on the top rack for 25 to 35 minutes.
- Halfway through baking, brush them with the melted butter from the pan.
- Sprinkle with a little more salt and dried parsley before serving.
Notes
Experiment with different herbs and seasonings for variations. Serve with your favorite toppings.
