Ingredients

- 1 head of cabbage, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 8 cups vegetable broth
- 1 can diced tomatoes
- Salt, to taste
- Pepper, to taste
- 1 teaspoon dried thyme
- 2 bay leaves
Instructions
- Chop the cabbage, onion, carrots, green bell pepper, and celery into uniform sizes.
- In a large pot, heat a splash of oil over medium heat and sauté the onions, carrots, bell pepper, and celery until softened.
- Add minced garlic and sauté for an additional minute.
- Stir in the chopped cabbage and cook until wilted.
- Pour in the vegetable broth and add diced tomatoes with their juices.
- Season with salt, pepper, thyme, and bay leaves.
- Bring to a boil, then reduce heat and let it simmer for about 30 minutes.
- Stir occasionally, adjusting seasoning as needed before serving.
Notes
For creamier texture, consider pureeing part of the soup with an immersion blender. Leftovers improve in flavor when stored overnight.
