Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 8 cups vegetable broth
  • 1 can diced tomatoes
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon dried thyme
  • 2 bay leaves

Instructions

  1. Chop the cabbage, onion, carrots, green bell pepper, and celery into uniform sizes.
  2. In a large pot, heat a splash of oil over medium heat and sauté the onions, carrots, bell pepper, and celery until softened.
  3. Add minced garlic and sauté for an additional minute.
  4. Stir in the chopped cabbage and cook until wilted.
  5. Pour in the vegetable broth and add diced tomatoes with their juices.
  6. Season with salt, pepper, thyme, and bay leaves.
  7. Bring to a boil, then reduce heat and let it simmer for about 30 minutes.
  8. Stir occasionally, adjusting seasoning as needed before serving.

Notes

For creamier texture, consider pureeing part of the soup with an immersion blender. Leftovers improve in flavor when stored overnight.
