Ingredients

- 2 cans white beans (drained and rinsed)
- 1 bunch kale (washed and chopped)
- ½ cup grated Parmesan cheese
- 4 cups broth (chicken or vegetable)

- 4 cloves garlic (minced)
- 1 onion (chopped)
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and garlic, and sauté until softened.
- Add the smoky sausage and cook until browned.
- Stir in white beans, kale, and broth.
- Season with salt and pepper to taste.
- Simmer for about 10-15 minutes until the kale is wilted and everything is heated through.
- Serve hot with grated Parmesan on top and crusty bread on the side.
Notes
For a smokier flavor, use smoked sausage. You can substitute kale with spinach or Swiss chard if desired.
