- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes

- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and sauté for another minute.
- Stir in the cooked white beans, diced tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
- Use an immersion blender to puree the soup to your desired consistency.
- Serve hot, garnished with fresh parsley.
Notes
To achieve a chunkier texture, reserve a portion of the white beans before blending and stir them back into the soup after puréeing. Experiment with different herbs and spices for a personalized twist.
