- 1 small yellow onion, chopped (about ½ cup)

- 2½ cups low-sodium chicken broth
- 2 (4 oz) cans diced green chilies

- ¼ teaspoon cayenne pepper

- ½ teaspoon paprika
- Juice from ½ small lime

- 2 (15 oz) cans great northern beans
- 1 cup sour cream (or plain Greek yogurt)
- 1 cup corn (frozen or fresh)
- 2 heaping cups cooked chicken, shredded (rotisserie or leftover chicken)
- Fresh cilantro, for garnish
- Shredded cheese, for garnish
- Tortilla chips, for garnish
- Green onions, for garnish
- Avocado slices, for garnish
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the chopped onion and sauté until softened, about 3-5 minutes.
- Stir in the minced garlic and cook for an additional 30 seconds to release its flavor.
- Pour in the chicken broth, diced green chilies, cumin, cayenne pepper, oregano, and paprika. Squeeze in the lime juice, seasoning with salt and pepper to taste.
- Drain and rinse the great northern beans in a strainer.
- To create a smooth texture, measure out a large ladleful of beans and transfer them to a food processor with a splash of broth. Puree until smooth. (This step is optional but gives the chili a rich, creamy thickness).
- Add the pureed beans, remaining whole beans, and corn to the pot. Bring the mixture to a simmer and let it cook, uncovered, for about 15 to 30 minutes—this helps the flavors blend beautifully.
- Remove from heat and stir in the sour cream and shredded chicken until well combined.
- Serve the chili garnished with fresh cilantro, shredded cheese, avocado slices, and tortilla chips for that extra crunch.
Notes
For extra heat, consider adding more cayenne pepper or fresh jalapeños. Customize with your favorite beans or vegetables for more texture.
