Description

A warm and hearty beef stew that comforts and nurtures, made with tender beef chuck and colorful vegetables.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 bay leaf

Instructions

  1. In a large pot, heat the olive oil over medium heat. Brown the beef cubes on all sides, about 5-7 minutes.
  2. Add the chopped onion and garlic, cooking until fragrant.
  3. Pour in the beef broth and add the carrots, potatoes, thyme, rosemary, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and let simmer for 2 hours or until the beef is tender.
  5. Remove the bay leaf before serving. Enjoy your hearty stew!
