Ingredients

- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 bay leaf
Instructions
- In a large pot, heat the olive oil over medium heat. Brown the beef cubes on all sides, about 5-7 minutes.
- Add the chopped onion and garlic, cooking until fragrant.
- Pour in the beef broth and add the carrots, potatoes, thyme, rosemary, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low and let simmer for 2 hours or until the beef is tender.
- Remove the bay leaf before serving. Enjoy your hearty stew!

For best results, use quality beef broth and feel free to experiment with vegetables.
