Instructions
- Cream the softened butter and 1/2 cup of powdered sugar together in a large mixing bowl until light and fluffy.
- Incorporate 1 tablespoon of lemon zest, 2 tablespoons of lemon juice, and 1 teaspoon of vanilla extract until smooth.
- Whisk together 2 cups of all-purpose flour, 1/4 cup of cornstarch, and 1/4 teaspoon of salt in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, mixing just until a soft dough forms.
- Divide the dough in half and shape each portion into a log about 1.5 inches in diameter. Wrap in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Unwrap the chilled dough and slice into 1/4-inch thick rounds, spacing them 1 inch apart on the prepared baking sheets.
- Bake for 10-12 minutes or until the edges turn light golden.
- Cool slightly before tossing in powdered sugar; for extra flavor, mix additional lemon zest into the sugar.
- Let the cookies cool completely on a wire rack and toss again in powdered sugar if desired.
