Ingredients

- 2 cups vegetable broth or water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced

- 1/4 cup olive oil

Instructions
- Cook the orzo pasta in vegetable broth or water according to package instructions. Drain and let cool.
- Combine the cooked orzo, cherry tomatoes, cucumber, red onion, parsley, and feta cheese in a large bowl.
- Whisk together the olive oil, lemon juice, salt, and pepper in a separate bowl.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
