  • 2 medium zucchinis
  • 1 cup (113g) shredded cheese (e.g., cheddar or mozzarella)
  • 1 cup (120g) all-purpose flour
  • 4 large eggs
  • 1 medium onion, finely chopped
  • 1/2 cup (120ml) vegetable oil
  • 1/2 teaspoon (3 ml) baking powder
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1/2 cup (70g) beef bacon, cooked and chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish or line it with parchment paper.
  3. Grate the zucchinis and squeeze out excess moisture.
  4. In a large bowl, combine the grated zucchinis, shredded cheese, and chopped onion.
  5. Add the cooked and chopped turkey bacon to the mixture.
  6. In a separate bowl, whisk together the eggs and vegetable oil.
  7. In another bowl, mix the flour, baking powder, salt, and black pepper.
  8. Add the dry ingredients to the zucchini mixture and stir until combined.
  9. Pour in the egg and oil mixture, and mix well until everything is evenly incorporated.
  10. Pour the mixture into the prepared baking dish.
  11. Spread the mixture evenly with a spatula.
  12. Bake in the preheated oven for 30-40 minutes or until golden brown and set.
