- 2 medium zucchinis
- 1 cup (113g) shredded cheese (e.g., cheddar or mozzarella)
- 1 cup (120g) all-purpose flour
- 4 large eggs
- 1 medium onion, finely chopped
- 1/2 cup (120ml) vegetable oil
- 1/2 teaspoon (3 ml) baking powder
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1/2 cup (70g) beef bacon, cooked and chopped
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a baking dish or line it with parchment paper.
- Grate the zucchinis and squeeze out excess moisture.
- In a large bowl, combine the grated zucchinis, shredded cheese, and chopped onion.
- Add the cooked and chopped turkey bacon to the mixture.
- In a separate bowl, whisk together the eggs and vegetable oil.
- In another bowl, mix the flour, baking powder, salt, and black pepper.
- Add the dry ingredients to the zucchini mixture and stir until combined.
- Pour in the egg and oil mixture, and mix well until everything is evenly incorporated.
- Pour the mixture into the prepared baking dish.
- Spread the mixture evenly with a spatula.
- Bake in the preheated oven for 30-40 minutes or until golden brown and set.
- Let cool slightly before slicing and serving.
