  • – 2 teaspoons (10 ml) vanilla extract

Instructions

  1. Set your oven to a temperature of 350°F and coat a 9×5-inch loaf pan with a non-stick cooking spray.
  2. Wash the zucchini and remove the ends. Use a fine grater to shred it, then wrap the shreds in a clean towel and squeeze to remove any extra moisture. Set it aside for later.
  3. In a medium-sized mixing bowl, combine the flour, baking soda, baking powder, cinnamon, and salt by whisking them together.
  4. In a large bowl, place the bananas and mash them with a fork. Mix in the sugar, eggs, oil, and vanilla extract until everything is well blended.
