Instructions
- Set your oven to a temperature of 350°F and coat a 9×5-inch loaf pan with a non-stick cooking spray.
- Wash the zucchini and remove the ends. Use a fine grater to shred it, then wrap the shreds in a clean towel and squeeze to remove any extra moisture. Set it aside for later.
- In a medium-sized mixing bowl, combine the flour, baking soda, baking powder, cinnamon, and salt by whisking them together.
- In a large bowl, place the bananas and mash them with a fork. Mix in the sugar, eggs, oil, and vanilla extract until everything is well blended.
- Gently fold the flour mixture into the banana mixture, stirring just until they are combined.
- Incorporate the shredded zucchini into the batter by stirring it in.
- Transfer the batter into the loaf pan that you have prepared.
- Bake for approximately 70-80 minutes, checking for doneness at the 70-minute mark with a toothpick. It should come out with crumbs but no wet batter. If the top darkens too much, cover it loosely with aluminum foil for the last 10-15 minutes.
- Allow the loaf to cool for a short time before slicing and serving.
