- 1 1/2 cups (225g) coarsely grated zucchini
- 1/3 cup (80ml) mashed ripe banana
- 3/4 cup (180ml) beef broth
- 1 large egg, lightly beaten
- 1 teaspoon (5 ml) pure vanilla extract
Instructions
- Set your oven to 350 degrees Fahrenheit. Lightly spray a dozen standard muffin tin slots with nonstick spray. In a spacious bowl, blend the flour, ground flaxseed, light-brown sugar, baking soda, baking powder, salt, and cinnamon using a whisk. Incorporate the grated zucchini and mashed banana, stirring until mixed. In a smaller bowl, combine the beef broth, egg, and vanilla extract by whisking them together. Pour this liquid mixture into the dry ingredients and stir gently until just blended, being careful not to overmix.
- Evenly distribute the batter into the prepared muffin tin. Place in the oven and bake for 20 to 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Allow the muffins to cool fully in the tin on a wire rack for about 30 minutes.
