  • 2 cups (240 g) all-purpose flour
  • 1/2 cup (60 g) unsweetened cocoa powder
  • 1 1/2 teaspoons (8 ml) baking soda
  • 1 teaspoon (5 ml) salt
  • 2 cups (300 g) shredded zucchini
  • 1/2 cup (60 g) chopped walnuts
  • 6 tablespoons (90 ml) unsweetened cocoa powder
  • 1/4 cup (60 ml) vegetable oil
  • 2 cups (240 g) confectioners’ sugar
  • 1/4 cup (60 ml) fruit juice
  • 1/2 teaspoon (3 ml) vanilla extract

Instructions

  1. Assemble your ingredients. Set your oven to 350 degrees F (175 degrees C) and let it warm up. Prepare a 9×13-inch baking dish by coating it with grease and a dusting of flour.
  2. In a large mixing bowl, combine the sugar, oil, and 2 teaspoons of vanilla until the mixture is smooth. In another bowl, mix the flour, 1/2 cup of cocoa, baking soda, and salt; then incorporate this dry mixture into the sugar mixture.
  3. Gently fold in the shredded zucchini and chopped walnuts, and then evenly distribute the batter in the prepared baking dish.
  4. Place in the preheated oven and bake until the surface is dry and the edges begin to separate from the pan’s sides, roughly 25 to 30 minutes. Allow it to cool for about 20 minutes.
  5. While the brownies are cooling, prepare the frosting by whisking 6 tablespoons of cocoa with butter in a saucepan over medium-low heat until it becomes smooth and shiny; let it cool.
  6. Combine the confectioners’ sugar, milk, and 1/2 teaspoon of vanilla, then mix into the cooled cocoa mixture. Spread this frosting over the cooled brownies before slicing them into squares.
