Ingredients

  • – ¾ cup (170g) unsalted butter, softened to room temperature
  • – ½ cup (100g) granulated sugar
  • – 1 cup (213g) packed light or dark brown sugar
  • – 1 large egg
  • – 2 teaspoons (10 ml) vanilla extract
  • – 1 cup (130g) shredded zucchini, squeezed of excess liquid, see Notes (about ½ medium zucchini)
  • – 2 ½ cups (330g) all-purpose flour
  • – 1 teaspoon (5 ml) baking soda
  • – 1 teaspoon (5 ml) salt
  • – 1/8-1/4 teaspoon (1 ml) ground cinnamon
  • – 1 cup (170g) semi-sweet chocolate chips
  • – ½ cup (56g) chopped almonds, optional

Instructions

  1. Set your oven to 375°F and prepare a baking tray by covering it with parchment paper.
  2. In a stand mixer, blend the butter, granulated sugar, and brown sugar until the mixture turns fluffy, which should take around 3-5 minutes. Pause occasionally to scrape the sides of the bowl.
  3. Incorporate the egg, vanilla extract, and shredded zucchini into the mixture, mixing thoroughly after each addition and ensuring to scrape the bowl at least once.
  4. Gradually add the flour, baking soda, salt, and cinnamon. Mix until the ingredients are nearly combined, then briefly fold in the chocolate chips and optional almonds.
  5. Use a #40 scoop to measure out 1½ tablespoon portions, forming them into balls. Arrange them evenly on the prepared baking tray, leaving about 4 inches of space between each.
  6. Place in the oven and bake for 9-11 minutes, until the cookie edges are golden brown and the tops have set but remain uncolored.
  7. Allow the cookies to cool on the baking tray for 5 minutes before moving them to a wire rack to cool down completely.

  • Thoroughly squeeze excess liquid from shredded zucchini to prevent overly moist cookies.
