- 1 cup all-purpose flour
- Crumbled feta cheese
- Greek yogurt (for tzatziki)

Instructions
- Mix spinach, flour, and other ingredients to form batter
- Form into small patties
- Fry until golden brown on both sides
- Prepare tzatziki sauce
- Serve fritters warm with tzatziki
Notes
- Can substitute all-purpose flour with almond flour, chickpea flour, or gluten-free flour blend (1:1 ratio)
- Frozen spinach can be used – thaw and squeeze out moisture, use 1/2 cup instead of 2 cups fresh
- For dairy-free version, use coconut or almond yogurt and replace feta with seasoned crumbled tofu
- Can be made ahead – reheat at 350°F for 10 minutes
- Tzatziki can be made 24 hours in advance for better flavor
