Ingredients

  • – 4 large zucchini (about 1 kg)
  • – 2 pounds (900 g) ground beef
  • – 24 ounces (680 g) pasta sauce
  • – 15 ounces (425 g) ricotta cheese
  • – 1 cup (125 g) shredded parmesan
  • – 1 ½ cups (170 g) shredded mozzarella
  • – 1 egg
  • – salt and pepper
  • – small handful fresh parsley and basil, chopped

Instructions

  1. Cut the zucchini. Set your oven to 400°F (200°C) to start heating. Slice the zucchini lengthwise into thin strips, adjusting the thickness to your preference. Put them to the side.
  2. Prepare the meat sauce. Heat a large skillet over medium-high heat and add the ground beef. Break it up with a spatula while cooking until it’s fully browned and no longer pink. Add the pasta sauce, keeping 1/2 cup aside, and mix well. Remove from the stove.
  3. Create the ricotta blend. In a medium-sized bowl, combine the ricotta cheese, parmesan, egg, salt, and pepper, stirring until mixed.
  4. Layer the base. Spread 1/2 cup of the reserved pasta sauce across the bottom of a 9×13-inch baking dish. Arrange the zucchini slices over the sauce, either overlapping or side-by-side.
  5. Assemble the middle layers. Spread half of the meat sauce over the zucchini, then evenly distribute half of the ricotta mixture on top. Sprinkle 1/2 cup of mozzarella and a bit of chopped parsley and basil over that.
  6. Repeat the layering process once more.
  7. Complete the top layer. Finish with a final layer of zucchini slices, a sprinkle of chopped parsley and basil, and 1/2 cup of mozzarella.
  8. Cook. Place the dish in the oven and bake for 40 to 45 minutes. Broil briefly to achieve a golden brown surface. Decorate with whole basil leaves before serving.
