  • 2 large eggs
  • 1/3 cup (80 ml) vegetable oil
  • 1 cup (200 g) sugar
  • 2 teaspoons (10 ml) vanilla extract
  • 1 cup (150 g) loosely packed grated zucchini
  • 1/2 cup (90 g) mini chocolate chips or chopped nuts (optional)

Instructions

  1. Set your oven to 400°F and lightly coat a mini muffin tray with cooking spray.
  2. Combine the flour, baking powder, baking soda, cinnamon, and salt in a large mixing bowl.
  3. In another bowl, beat the eggs, vegetable oil, sugar, and vanilla extract together. Pour this mixture into the dry ingredients. The batter will be quite dense initially but will become easier to mix once the zucchini is added.
  4. Place the grated zucchini in a kitchen towel and squeeze out as much liquid as you can. Incorporate the zucchini and, if desired, mini chocolate chips or nuts into the batter.
  5. Spoon the batter evenly into the prepared mini muffin cups, filling each to the top.
  6. Bake the muffins until a toothpick inserted in the center comes out clean, which should take about 14 to 18 minutes. Once done, take them out of the oven and let them cool in the tray for 5 minutes before enjoying.
