- 1/2 teaspoon (3 ml) nutmeg
- 1/4 teaspoon (1 ml) salt
- 1 cup (240 ml) walnuts (optional)
- 1 cup (240 ml) raisins or dried cranberries (optional)
Instructions
- Warm up your oven to 350°F (175°C). Lightly grease each section of your muffin tin with butter or a spray of vegetable oil.
- Create the batter: In a big mixing bowl, whisk the eggs. Add in the sugar and vanilla extract. Blend in the grated zucchini and vegetable oil. In another bowl, combine the flour, baking soda, baking powder, cinnamon, ground ginger, nutmeg, and salt.
- Merge the mixtures: Gently fold the dry ingredients into the zucchini mix, being careful not to over-stir. Add walnuts, raisins, or cranberries if desired.
- Prepare the muffin tin: Use a spoon to evenly distribute the batter among the muffin cups, filling them completely, slightly above the edge.
- Cook: Place in the oven on the middle rack and bake until the muffins turn golden and spring back when touched, approximately 22 to 30 minutes. Check doneness with a long toothpick or skewer to ensure the centers are fully cooked. Allow to cool on a wire rack for 5 minutes.
