- 1 1/2 cups (220g) finely grated zucchini, do not drain liquid out
- 1/2 cup (106g) brown sugar
- 1/4 cup (50g) granulated sugar
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 2 teaspoons (10 ml) vanilla extract
- 1 1/2 cups (180g) all-purpose flour
- 1 teaspoon (5 ml) baking soda
- 1/2 teaspoon (3 ml) baking powder
- 1 teaspoon (5 ml) cinnamon
- 1/4 teaspoon (1 ml) nutmeg
- 1/2 teaspoon (3 ml) salt
- 1 cup (89g) old-fashioned oats, divided
Instructions
- Set your oven to 350°F and prepare a 9×5 loaf pan by greasing it lightly or lining it with parchment paper.
- In a big mixing bowl, combine the finely grated zucchini, complete with its liquid, brown sugar, white sugar, vegetable oil, eggs, and vanilla extract, then mix until everything is well blended.
- In another bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt until well combined. Add this dry mixture to the wet ingredients and stir gently until just mixed.
- Set aside 2 tablespoons of oats for the topping, and stir the rest into the batter until well distributed.
- Transfer the batter to the prepared loaf pan and sprinkle the oats you set aside on top. Bake for approximately 48 to 55 minutes, or until a toothpick inserted in the center comes out clean or with dry crumbs, or when the bread’s center temperature reaches between 200 and 205 degrees Fahrenheit.
- Let the bread cool down completely on the countertop before taking it out of the pan and cutting it into slices.
