Instructions
- Preheat the oven to 350°F (175°C).
- Line a muffin tin with paper liners or grease with cooking spray.
- In a large bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, beat the eggs.
- Add grated zucchini, vegetable oil, and vanilla extract to the eggs, mixing well.
- Pour the wet ingredients into the dry ingredients, stirring until just combined.
- If using, fold in the chopped walnuts.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
