Ingredients

Scale
  • 1 1/2 cups all-purpose flour (180 g)
  • 1 cup granulated sugar (200 g)
  • 1 teaspoon baking powder (5 g)
  • 1/2 teaspoon baking soda (2.5 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1 teaspoon ground cinnamon (2.5 g)
  • 1/2 teaspoon ground nutmeg (1 g)
  • 1 cup grated zucchini (about 1 medium zucchini) (150 g)
  • 1/3 cup vegetable oil (80 ml)
  • 2 large eggs
  • 1 teaspoon vanilla extract (5 ml)
  • 1/2 cup chopped walnuts (optional) (60 g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or grease with cooking spray.
  3. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, beat the eggs.
  5. Add grated zucchini, vegetable oil, and vanilla extract to the eggs, mixing well.
  6. Pour the wet ingredients into the dry ingredients, stirring until just combined.
  7. If using, fold in the chopped walnuts.
  8. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes.
  11. Transfer the muffins to a wire rack to cool completely.

Notes

  • Thoroughly drain excess moisture from grated zucchini to avoid a soggy texture in the muffins.
  • Substitute vegetable oil with unsweetened applesauce for a healthier option and reduced fat content.
  • Enhance flavor by adding ground cloves or ginger to the dry ingredients for a more complex spice profile.
