- 1 cup of ricotta cheese
- 2 cups of fresh spinach
- Zest and juice of 1 lemon

Instructions
- Boil the pasta in salted water according to the package instructions until al dente.
- While the pasta cooks, in a large bowl, combine the ricotta, lemon zest, lemon juice, salt, and pepper. Mix well.
- Once the pasta is ready, reserve about 1 cup of pasta water, then drain the pasta.
- Add the hot pasta directly to the ricotta mixture. Toss to combine.
- Fold in the fresh spinach until it wilts slightly from the heat of the pasta.
- Use reserved pasta water as needed to reach your desired creamy consistency.
- Drizzle with olive oil and adjust seasoning to taste before serving.
