Description

A quick and delightful pasta dish featuring creamy ricotta, fresh spinach, and zesty lemon, perfectly suited for busy weeknights.

Ingredients

Scale
  • 8 ounces of your favorite pasta (spaghetti or linguine works well)
  • 1 cup of ricotta cheese
  • 2 cups of fresh spinach
  • Zest and juice of 1 lemon
  • Salt and black pepper to taste
  • Olive oil for drizzling
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Boil the pasta in salted water according to the package instructions until al dente.
  2. While the pasta cooks, in a large bowl, combine the ricotta, lemon zest, lemon juice, salt, and pepper. Mix well.
  3. Once the pasta is ready, reserve about 1 cup of pasta water, then drain the pasta.
  4. Add the hot pasta directly to the ricotta mixture. Toss to combine.
  5. Fold in the fresh spinach until it wilts slightly from the heat of the pasta.
  6. Use reserved pasta water as needed to reach your desired creamy consistency.
  7. Drizzle with olive oil and adjust seasoning to taste before serving.

Notes

Always reserve pasta water for creamier texture. Experiment with greens and finish with fresh herbs for extra flavor.
