Description

A quick and delightful baked cod recipe that showcases fresh ingredients and zesty flavors, perfect for weeknight dinners.


Ingredients

  • 4 pieces of fresh cod
  • 2 tablespoons of avocado oil, divided
  • Lemon slices
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon thyme
  • ½ teaspoon basil
  • ½ teaspoon oregano
  • ½ teaspoon black pepper
  • ¼ teaspoon salt (add more if desired)
  • ¼ teaspoon cayenne (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Clean and pat the fish dry.
  3. Drizzle approximately 1 tablespoon of avocado oil over the fish and coat both sides.
  4. Mix together all of the listed seasonings, then sprinkle the seasoning mixture onto both sides of the fish.
  5. Add lemon slices to a baking sheet and drizzle approximately 1 tablespoon of oil onto the baking sheet.
  6. Place the fish onto the lemon slices and put the baking sheet in the oven.
  7. Bake at 400°F for about 10 minutes (or until cooked to your liking).
  8. Broil for 1 to 2 minutes to achieve a nice golden finish.

Notes

Double the spice mix to use for other proteins or vegetables for easy seasoning in future meals.
