  • 3 eggs (2 whole eggs + 1 yolk)
  • ½ teaspoon vanilla extract
  • ¾ cup all-purpose flour (100g)
  • 1 ½ cups cornstarch (200g)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup dulce de leche (250g)

Instructions

  1. Combine the softened butter and powdered sugar in a large bowl using an electric hand mixer for about 2 minutes until light and fluffy.
  2. Add the ½ teaspoon of vanilla extract and eggs (2 whole eggs + 1 yolk), beating smoothly.
  3. Incorporate the all-purpose flour, cornstarch, baking powder, and salt gradually, mixing until cohesive.
  4. Gather the dough into a ball, wrap in plastic wrap, and chill in the fridge for 1 hour.
  5. Preheat the oven to 325 degrees Fahrenheit while the dough chills.
  6. Roll out the dough to a ¼-inch thickness and cut into 2-inch circles.
  7. Arrange the cookies on an ungreased cookie sheet and chill for an additional 5 minutes.
  8. Bake the cookies for 7-8 minutes until lightly browned around the edges.
  9. Fill the cooled cookies with dulce de leche to create sandwich cookies.
