- ½ teaspoon salt
- ¾ cup dulce de leche (250g)
Instructions
- Combine the softened butter and powdered sugar in a large bowl using an electric hand mixer for about 2 minutes until light and fluffy.
- Add the ½ teaspoon of vanilla extract and eggs (2 whole eggs + 1 yolk), beating smoothly.
- Incorporate the all-purpose flour, cornstarch, baking powder, and salt gradually, mixing until cohesive.
- Gather the dough into a ball, wrap in plastic wrap, and chill in the fridge for 1 hour.
- Preheat the oven to 325 degrees Fahrenheit while the dough chills.
- Roll out the dough to a ¼-inch thickness and cut into 2-inch circles.
- Arrange the cookies on an ungreased cookie sheet and chill for an additional 5 minutes.
- Bake the cookies for 7-8 minutes until lightly browned around the edges.
- Fill the cooled cookies with dulce de leche to create sandwich cookies.
