Description

Ingredients

  • 2 ripe avocados, diced
  • 1 cup fresh corn (or frozen, thawed)
  • 1 pound shrimp, peeled and deveined
  • 1 lime, juiced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat grill to medium-high heat. Toss shrimp with olive oil, salt, and pepper. Grill shrimp for 2-3 minutes on each side until pink and cooked through. Remove from grill and set aside.
  2. In a large bowl, combine diced avocados, fresh corn, red onion, and cilantro.
  3. Squeeze lime juice over the salad and gently mix to combine.
  4. Add grilled shrimp on top and serve immediately.
