- 4 slices bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 4 medium potatoes, diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
- Add the ground beef, onion, and garlic to the pot and cook until the beef is browned.
- Pour in the beef broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes or until the potatoes are tender.
- Stir in the milk and cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with crispy bacon and green onions.
