Description

Delicious and easy to make baked chicken tacos filled with tender rotisserie chicken, melty cheese, and fresh toppings.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 can Rotel (diced tomatoes and green chilies)
  • 8 taco shells
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onions
  • 1/2 cup chopped cilantro
  • Sour cream (for serving)
  • Guacamole (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the shredded rotisserie chicken and Rotel in a bowl; mix well.
  3. Place the taco shells in a baking dish.
  4. Fill each taco shell with the chicken mixture.
  5. Top each filled shell with shredded cheese, onions, and cilantro.
  6. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
  7. Serve with sour cream and guacamole on the side.

Notes

For extra flavor, consider using a Mexican cheese blend. Adjust spice levels with spicy Rotel or jalapeños.
