- 2 cups shredded rotisserie chicken
- 1 can Rotel (diced tomatoes and green chilies)
- 8 taco shells
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- Sour cream (for serving)
- Guacamole (for serving)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the shredded rotisserie chicken and Rotel in a bowl; mix well.
- Place the taco shells in a baking dish.
- Fill each taco shell with the chicken mixture.
- Top each filled shell with shredded cheese, onions, and cilantro.
- Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
- Serve with sour cream and guacamole on the side.
Notes
For extra flavor, consider using a Mexican cheese blend. Adjust spice levels with spicy Rotel or jalapeños.
