Instructions
- Preheat the oven to 375°F (190°C).
- Melt the butter in a saucepan over medium heat and sauté the garlic until fragrant.
- Add the coconut milk, lemon zest, and lemon juice; stir until combined.
- Season the cod fillets with salt and pepper and place them in a baking dish.
- Pour the coconut lemon sauce over the cod fillets.
- Bake for 20-25 minutes or until the cod is cooked through and flakes easily with a fork.
