Ingredients

  • 4 large eggs
  • 200g feta cheese
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add the cherry tomatoes to a baking dish and drizzle with olive oil. Sprinkle with salt and pepper.
  3. Place the feta cheese in the center of the tomatoes.
  4. Bake in the preheated oven for about 20 minutes, until the tomatoes are bursting and the feta is golden.
  5. Remove from the oven and scatter the fresh spinach over the top.
  6. Make small wells in the mixture and crack the eggs into each well.
  7. Return to the oven and bake for an additional 10-15 minutes, or until the eggs are cooked to your liking.
  8. Garnish with fresh herbs if desired and serve warm.
