Ingredients

  • 200g feta cheese
  • 4 large eggs
  • 250g cherry tomatoes
  • 100g fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, add cherry tomatoes and olive oil, then season with salt, black pepper, and red pepper flakes if desired.
  3. Nestle blocks of feta cheese among the tomatoes.
  4. Bake for about 20 minutes, or until the tomatoes burst and the feta is soft.
  5. Remove from the oven and gently stir to mix the cheese and tomatoes.
  6. Make wells in the mixture and crack eggs into each well.
  7. Return to the oven and bake for another 10-15 minutes until the eggs are set to your liking.
  8. Serve warm with fresh spinach on the side or mixed in.
