- 200g feta cheese
- 4 large eggs
- 250g cherry tomatoes
- 100g fresh spinach
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, add cherry tomatoes and olive oil, then season with salt, black pepper, and red pepper flakes if desired.
- Nestle blocks of feta cheese among the tomatoes.
- Bake for about 20 minutes, or until the tomatoes burst and the feta is soft.
- Remove from the oven and gently stir to mix the cheese and tomatoes.
- Make wells in the mixture and crack eggs into each well.
- Return to the oven and bake for another 10-15 minutes until the eggs are set to your liking.
- Serve warm with fresh spinach on the side or mixed in.
