- 1 cup (120g) unbleached all-purpose flour
- 2 teaspoons baking powder
- 1.25 cups 2% cottage cheese
- 1 egg, beaten (for egg wash)
- Optional toppings: everything bagel seasoning, poppy seeds, dried garlic flakes, dried onion flakes, sesame seeds, shredded asiago cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare a rimmed baking sheet with parchment paper.
- Mix the flour and baking powder in a large bowl.
- Combine the cottage cheese with the flour mixture until it resembles small crumbles.
- Knead the dough on a floured surface until not sticky (1-2 minutes).
- Shape the dough into four portions and create bagel shapes.
- Apply the beaten egg wash on each bagel.
- Add desired toppings by dipping the bagels.
- Bake for 25-30 minutes until golden brown.
- Cool on a wire rack for 15 minutes before slicing.

Store bagels in an airtight container for 2-3 days at room temperature or freeze for up to three months.
