Description

Delightful smoky BBQ skewers featuring marinated tofu or jackfruit and fresh seasonal vegetables.

Ingredients

  • Fresh seasonal vegetables (bell peppers, zucchini, mushrooms)
  • Tofu or tempeh, diced or pressed
  • Jackfruit (canned or fresh)
  • Eggplant, sliced
  • Marinades (soy sauce, olive oil, vinegar, your favorite spices)
  • Fresh herbs (cilantro, parsley, basil)
  • Skewers (bamboo or metal)

Instructions

  1. Start by marinating the jackfruit or tofu in a mixture of soy sauce, olive oil, and spices. Let it sit for at least 30 minutes for maximum flavor.
  2. Prepare your grill by preheating it to medium-high heat. If using wooden skewers, soak them in water to prevent burning.
  3. Assemble the skewers by alternating pieces of marinated tofu or jackfruit with chunks of fresh vegetables. Be creative with the arrangements!
  4. Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally to achieve even charring.
  5. For eggplant, brush slices with olive oil and sprinkle with salt and pepper. Grill for 4-5 minutes on each side until tender and slightly charred.
  6. Enjoy the vibrant flavors of your BBQ feast!

Notes

Experiment with different vegetables and marinades to customize your skewers.
