Ingredients
- Fresh seasonal vegetables (bell peppers, zucchini, mushrooms)
- Tofu or tempeh, diced or pressed
- Jackfruit (canned or fresh)
- Eggplant, sliced
- Marinades (soy sauce, olive oil, vinegar, your favorite spices)
- Fresh herbs (cilantro, parsley, basil)
- Skewers (bamboo or metal)
Instructions
- Start by marinating the jackfruit or tofu in a mixture of soy sauce, olive oil, and spices. Let it sit for at least 30 minutes for maximum flavor.
- Prepare your grill by preheating it to medium-high heat. If using wooden skewers, soak them in water to prevent burning.
- Assemble the skewers by alternating pieces of marinated tofu or jackfruit with chunks of fresh vegetables. Be creative with the arrangements!
- Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally to achieve even charring.
- For eggplant, brush slices with olive oil and sprinkle with salt and pepper. Grill for 4-5 minutes on each side until tender and slightly charred.
