- 1 beef tenderloin (about 2–3 pounds)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin generously with salt and pepper.
- Heat olive oil in an ovenproof skillet over medium-high heat.
- Sear the beef on all sides until nicely browned.
- Remove from heat and rub the beef with herbs and garlic.
- Add beef broth and balsamic vinegar to the skillet.
- Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 135°F (medium rare).
- Allow the beef to rest for 10 minutes before slicing.
- Serve on a platter with pan juices drizzled over the top.

For optimal results, use a meat thermometer to monitor the internal temperature of the beef.
