Description

Ingredients

  • 1 beef tenderloin (about 23 pounds)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef tenderloin generously with salt and pepper.
  3. Heat olive oil in an ovenproof skillet over medium-high heat.
  4. Sear the beef on all sides until nicely browned.
  5. Remove from heat and rub the beef with herbs and garlic.
  6. Add beef broth and balsamic vinegar to the skillet.
  7. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 135°F (medium rare).
  8. Allow the beef to rest for 10 minutes before slicing.
  9. Serve on a platter with pan juices drizzled over the top.
