  • 2 cups zucchini, shredded
  • ½ cup walnuts, chopped
  • ½ cup chocolate chips
  • 5 tbsp unsalted butter, melted
  • ⅓ cup unsweetened cocoa powder (for frosting)
  • 1 ½ cups powdered sugar
  • 3 tbsp milk, room temperature
  • ½ tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F. Line your 9×13-inch baking pan with parchment paper, allowing some paper to hang on two sides for easy removal.
  2. In one bowl, whisk together the all-purpose flour, ⅔ cup cocoa powder, baking soda, baking powder, and salt. Set this aside.
  3. In a separate large mixing bowl, combine the granulated sugar, vegetable oil, and 1 ½ tsp vanilla extract using a rubber spatula. Stir until well combined.
  4. Gradually add the dry ingredients from the first bowl into the sugar mixture. Stir until all the ingredients fully incorporate. It may look dry at this stage, but don’t worry.
  5. Fold in the shredded zucchini, chopped walnuts, and chocolate chips. As you mix, the zucchini will release moisture, transforming the batter into a cohesive mixture.
  6. Pour the brownie batter into the prepared baking pan, spreading it evenly with a spatula.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean and dry.
  8. Once baked, remove the brownies from the oven and allow them to cool completely on a cooling rack.
  9. While the brownies cool, prepare your chocolate frosting. In a mixing bowl, whisk together 5 tbsp melted butter and ⅓ cup cocoa powder until the mixture becomes shiny and well blended. Gradually whisk in 1 ½ cups powdered sugar, 3 tbsp milk, and ½ tsp vanilla extract.
  10. Once the brownies cool, spread the chocolate frosting generously over the top. Cut the brownies into 24 squares and enjoy!

Notes

Squeeze excess moisture from shredded zucchini if it is watery. Experiment with mix-ins like shredded coconut or dried fruit, and consider using high-quality cocoa powder for better flavor.
