Ingredients

  • 1 pound ground beef or chicken
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 4 cups chicken or vegetable broth
  • 8 lasagna noodles, broken into pieces
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a large pot, cook ground meat over medium heat until browned. Drain excess fat.
  2. Add onion and garlic, cooking until softened.
  3. Stir in diced tomatoes, tomato paste, and broth. Bring to a simmer.
  4. Break lasagna noodles into pieces and add to the pot.
  5. Stir in Italian seasoning and basil. Let the noodles cook according to package instructions.
  6. Once noodles are tender, mix in mozzarella and Parmesan cheese, stirring until melted.

Notes

For a heartier soup, reduce the amount of broth. Top with additional cheese before serving.
