- 1 pound ground beef or chicken
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 4 cups chicken or vegetable broth
- 8 lasagna noodles, broken into pieces
- 2 teaspoons Italian seasoning
- 1 teaspoon dried basil
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
Instructions
- In a large pot, cook ground meat over medium heat until browned. Drain excess fat.
- Add onion and garlic, cooking until softened.
- Stir in diced tomatoes, tomato paste, and broth. Bring to a simmer.
- Break lasagna noodles into pieces and add to the pot.
- Stir in Italian seasoning and basil. Let the noodles cook according to package instructions.
- Once noodles are tender, mix in mozzarella and Parmesan cheese, stirring until melted.
Notes
For a heartier soup, reduce the amount of broth. Top with additional cheese before serving.
