- 2 tablespoons vegetable oil

Instructions
- In a skillet, heat vegetable oil over medium heat.
- Add chopped onion, bell pepper, celery, and garlic, and sauté until softened.
- Add ground venison and cook until browned.
- Stir in the Cajun seasoning, salt, and pepper.
- Add the rice and stir to combine.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes, or until the rice is tender and liquid is absorbed.
- Fluff with a fork and garnish with chopped green onions before serving.
Notes
For extra flavor, consider simmering some herbs with the chicken broth. Adjust the level of Cajun seasoning to your taste.
